To celebrate summer, I created these mini watermelon cupcakes because the actual watermelon plants in my garden didn’t survive the wrath of my backyard wildlife. They took about 25 minutes so it was a quick project since I wanted to eat them as soon as they came out of the oven.
- 1 box of strawberry cake mix
- 1 can of white whipped frosting
- Green & yellow food coloring (to create a light pastel green)
- Chocolate chips or black sprinkles (to add the effect of watermelon seeds)
